During 2003-2009 I worked for Royal Unibrew.
I am co-owner of two breweries: ‘Jelling Bryghus’ (see www.jellingbryghus.dk) and the start-up ‘Rahbek Bräu’.
Two times per year I travel to Upper Franconia (northern part of Bavaria) to visit breweries. So far I have been to >150 breweries, plus a lot of ‘biergartens’ and other restaurants etc. The standards are often high, but I would like to mention a few of the many outstanding places: Gänstaller Bräu, Brauerei Wagner in Merkendorf, Brauerei Hummel in Merkendorf, Privatbrauerei Reh in Lohndorf and Brauerei Spezial in Bamberg. When it comes to the northern part of Germany, I since 1993 have been trained and coached by one of the leading German experts in pilsener types, namely Herr Eike Wibbeler and his network (e.g. Herr Ulrich Wibbeler, Herr Sven Wibbeler, Frau Silke Wibbeler (specialty in “friesisches und fischköpfiges Bier”), Herr Jochen Zahn (you will never be forgotten!) and most of the Schützenverein in the Metten and Westerkappeln area). I have endured many hard sessions in the notorious “Backes” including several years of training in the art of “Sieben-Minuten-Bierzapfen-von-0,2L mit starker Schaumkrone” before passing the final tests in this artform.
